Chicken and Rice (Island Style)

Ingredients

2 Pounds Chicken wings (backs, necks, small pieces of chicken also work well)
1 small can tomato sauce
1 small onion
1 half green pepper
3 cups water
3/4 cup rice
Salt to taste
Garlic salt

OPTIONAL INGREDIENTS
Parsley, Olives
 

Instructions
  1. Cut chicken wings in 2 pieces each and season with garlic salt
  2. Add about 1/2 inch level water to large pan.
  3. Add chicken to pan
  4. Cook on medium-high heat until about 30 minutes until mixture begins to boil.
  5. Add 2 additional cups of water to pan
  6. Add tomato sauce to pan and mix.
  7. Cook until an additional 15 minutes after the mixture comes back to a boil
  8. In separate container, chop and dice onion and green pepper.
  9. Add vegetables to mixture
  10. If needed, add additional water to be sure everything in pan is still covered. 
  11. Allow to boil an additional 15 minutes.
  12. Add rice and mix
  13. Cover and lower heat to medium-low to allow rice to cook.
  14. Stir occasionally until rice is soft and little liquid remains.
  15. Season to taste (if needed)
