Squash Casserole

Ingredients

If you're one of those people who doesn't like vegetables and especially doesn't like squash, you just might change your mind when you try this favorite.

  • 2 lbs yellow squash
  • 3/4 cup mayo
  • 1 chopped onion (optional)
  • 1/2 chopped green pepper (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 tsp black pepper
  • 1/4 cup plain bread crumbs
  • 2 eggs
Instructions
  1. Preheat oven to 350 degrees
  2. Boil squash until soft (about 30 minutes)
  3. In bowl, mix mayo, cheese, black pepper, and eggs, as well as optional ingredients.
  4. Drain water from squash and add squash to mixture in bowl.
  5. Mix well.
  6. Coat baking dish with Pam
  7. Spread mixture in coated baking dish
  8. Sprinkle breadcrumbs to cover top of mixture and pat top with butter.
  9. Bake at 350 for 45-60 minutes until golden brown.
