Sweet Potato Casserole

Ingredients

A holiday favorite side dish that is sure to please even the pickiest eater.  Hold the marshmallows!

Potato Mixture

  • 3 Cups Cooked, mashed Sweet Potatoes
  • 1 Cup Sugar
  • 1 TBSP Vanilla
  • 1/2 Cup Butter
  • 1/2 Cup Milk
  • 3 Eggs

Topping

  • 1 Cup Light brown Sugar
  • 1/2 Cup margarine
  • 1/2 Cup Flour
  • 1 Cup Chopped Pecans
Instructions
  1. Preheat oven to 350 degrees
  2. Peel and chop sweet potatoes
  3. Boil Sweet Potatoes in water until cooked and soft
  4. Drain water from Sweet Potatoes
  5. Add Sweet Potatoes to large mixing bowl
  6. Add sugar, Vanilla, Butter, Milk and Eggs to Sweet potatoes
  7. Use electric mixer to form a smooth potato mixture
  8. Use Pam to coat a 9 X 13 rectangular baking dish
  9. Pour potato mixture into greased baking dish
  10. In separate bowl, add all topping ingredients
  11. Spoon topping over sweet potato mixture
  12. Bake at 350 degrees for 25 minutes
