Ingredients
A holiday favorite side dish that is sure to please even the pickiest eater. Hold the marshmallows!
Potato Mixture
- 3 Cups Cooked, mashed Sweet Potatoes
- 1 Cup Sugar
- 1 TBSP Vanilla
- 1/2 Cup Butter
- 1/2 Cup Milk
- 3 Eggs
Topping
- 1 Cup Light brown Sugar
- 1/2 Cup margarine
- 1/2 Cup Flour
- 1 Cup Chopped Pecans
Instructions
- Preheat oven to 350 degrees
- Peel and chop sweet potatoes
- Boil Sweet Potatoes in water until cooked and soft
- Drain water from Sweet Potatoes
- Add Sweet Potatoes to large mixing bowl
- Add sugar, Vanilla, Butter, Milk and Eggs to Sweet potatoes
- Use electric mixer to form a smooth potato mixture
- Use Pam to coat a 9 X 13 rectangular baking dish
- Pour potato mixture into greased baking dish
- In separate bowl, add all topping ingredients
- Spoon topping over sweet potato mixture
- Bake at 350 degrees for 25 minutes
