Mushroom Chicken

Ingredients

Here's a nice dish for you chicken and mushroom lovers.

  • 5 lbs chicken thighs (and/or breasts)
  • 1 can cream of mushroom soup
  • 1 soup can of dry or creamy sherry(your choice)
  • 1 small bottle sliced mushrooms
  • ¼ cup soy sauce
  • 1 cup water
  • Seasoning :  Adobo or your favorite
Instructions
  1. Season chicken with adobo or your favorite seasoning and sprinkle with soy sauce and set aside in a baking pan to marinate for 1 hour or so.
  2. In a large sauce pan, mix the cream of mushroom soup with a can full of the sherry and add the sliced mushrooms.  Heat until the soup is diluted, stirring frequently.
  3. Preheat oven to 350 degrees.  
  4. To the chicken that has been marinating, add 1 cup of water and seal tightly with aluminum foil.
  5. Bake for 1 ½ hour at 350 degreee. 
  6. Remove chicken from baking and throw off the excess water, saving only 1 cup full. 
  7. Add this cup to the mushroom soup mixture, mix carefully and pour over the chicken. 
  8. Return to the oven ,bake  uncovered for another hour or 2, until chicken starts turning brown, basting frequently.
