Holiday Potato Stuffing

Ingredients

A holiday favorite in the islands is the orange holiday potato stuffing.

  • ¼ cup veg.oil       
  •  1 Bay leaf
  •  Â½ cup sugar
  •  Â½ tsp salt to taste                                
  • ¼ cup chopped onion                                
  • ¼ cup chopped green pepper                      
  • ¼ cup chopped red pepper  
  •  Â½ tsp of kitchen bouquet
  • ¼ cup chopped celery     
  • 1 pkg mashed potatoes (Pillsbury granules 6.5 oz pkg - use 1 1/2 bag of box)
  • 1 sprig thym
  • 1 chopped parsley   
  • 1 sm.finely chopped hot bonnet pepper                    
  • 1 sm. Can tomato paste
  • 4 cups water
  • ½ cup golden or regular raisens
Instructions
  1. Preheat oven to 325 degrees
  2. In a heavy pot, heat oil and saute onions, green/red peppers, celery, thyme, parsley and hot pepper. 
  3. Stir in tomato paste until well blended. 
  4. Add water and raisins. 
  5. Bring mixture to a boil. 
  6. Sweeten with sugar.
  7. Add salt and kitchen bouquet.   
  8. Gradually stir in mashed potatoes to make a stiff consistency.
  9. Remove pot from fire and transfer mixture to a casserole which has been sprayed with Pam.
  10. Smooth top. 
  11. Brush with margarine
  12. Bake at 325 for 45 minutes to 1 hour until firm.
