Chicken and Rice

Ingredients

Another family staple when I was growing up was mom's chicken and rice.

  • 2 lbs chicken wingettes, seasoned with badia seasoning or garlic salt, browned in a pot
  • 1 large chopped onion: to be added to cooked chicken in pot
  • ½ chopped green pepper: to be added to cooked chicken in pot
  • 1 tsp. Poultry seasoning: to be added to cooked chicken in pot
  • 1 tsp. Thyme (ground or leaves): To be added to cooked chicken in pot
  • 1 lg. Chicken boullion cube: To be added to cooking chicken in water
  • 1 small can tomato sauce: To be added to cooking chicken in water
  • 2 tsp salt (or to taste): To be added to cooking chicken in water
  • ½ tsp. Black pepper: To be added to cooking chicken in water
  • 1 ¼ cup Uncle Ben’s rice, To be added to cooked chicken
  • Badia complete seasoning or garlic salt: To season the uncooked chicken
Instructions
  1. Brown chicken in frying pan
  2. After browned, add water to cover chicken + 2 inches in pot.
  3. Add salt, pepper, tomato sauce, and boullion cube.
  4. Bring to a boil.
  5. When cooked, add poultry seasoning, thyme, onions, green pepper
  6. Bring to a boil again. (about 4 cups of water now remain).
  7. Check flavor and add more to taste as needed.
  8. Add rice and bring to boil under medium heat. Stir frequently to avoid burning bottom of pot. Cook covered.

Notes

  • Not all moisture will be absorbed in cooking. Once rice is soft, remove from heat and leave covered. Stir occasionally to allow remaining moisture to be absorbed.
  • This dish makes a lot of servings
