Ingredients
An island treat that's good for any occasion. This recipe belongs to none other than my aunt Alicia Vante.
- 3 cups flour
- 3 level tablespoons margarine/butter
- ¾ tsp. Salt
- 3 flat tablespoons sugar
- 1 ½ cup water
- 3 heaping tsp Davis Baking Powder
Instructions
- Mix 3 cups flour and 3 TBSP margarine together and let stand
- In a separate bowl, add salt, sugar, water and Baking Powder and stir into a froth:
- Add ¾ of this liquid mixture to the flour mixture and gradually add the rest.
- Kneed this mixture.
- When too soft, add flour until just right.
- Separate this mixture into two and kneed each one forming each into a long loaf.
- Cut loaf into separate round cakes, and let stand about 1 hour.
- When ready to fry, spread each cake with your fingers until about 3 – 3 ½ inches in diameter.
- Place in a hot frying pan with generous oil to fry.
- After frying, place on paper towels to absorb excess oil. Johnny cakes are ready to eat.
Note
To make 28-30 Cakes, change amounts as follows:
- 6 cups flour
- 6 heaping tsp. Baking powder
- l ½ tsp. Salt
- 6 level tablespoon margarine
- 6 flat tablespoon sugar
- 2 ½ cups water
