Ingredients

An island treat that's good for any occasion.  This recipe belongs to none other than my aunt Alicia Vante.

  • 3 cups flour
  • 3 level tablespoons margarine/butter
  • ¾ tsp. Salt
  • 3 flat tablespoons sugar
  • 1 ½ cup water
  • 3 heaping tsp Davis Baking Powder
Instructions
  1. Mix 3 cups flour and 3 TBSP margarine together and let stand
  2. In a separate bowl, add salt, sugar, water and Baking Powder and stir into a froth:
  3. Add ¾ of this liquid mixture to the flour mixture and gradually add the rest.
  4. Kneed this mixture.
  5. When too soft, add flour until just right.
  6. Separate this mixture into two and kneed each one forming each into a long loaf.
  7. Cut loaf into separate round cakes, and let stand about 1 hour.
  8. When ready to fry,  spread each cake with your fingers until about 3 – 3 ½  inches in diameter.
  9. Place in a hot frying pan with generous oil to fry.
  10. After frying, place on paper towels to absorb excess oil.   Johnny cakes are ready to eat.
